Ugh, has it has ever been a week!
I find myself saying that sentence way more frequently than I did during my pre-Momma years. Being a mom of three beautiful children is THE best gift I have ever received, but sometimes… just sometimes… when the moon is full and your 4.99999 year old is insistent on being independent (i.e.: takes way more time to get anything done) your toddler (who is smack dab in the middle of the girls) is two-year-old-tantruming, and your baby just doesn’t want to sleep at night… Yah, those times I just want to grab all the chocolate and lock myself in the bathroom for one solid minute.
Yes. It has been one of those weeks.
I had full intentions of posting a beautiful Earl Grey Panna Cotta Tart earlier this week. It was stunning, and beautiful, and the most perfect excuse to try earl grey in anything for the first time in my life. Photos were done, tart was devoured, and a few days later the tantruming two year old threw my hard drive across the room. Panic. Shear panic.
I tip-toed over to the drive, now laying upside on the floor, and swooped it up into my arms as you would a newborn. I quietly talked to myself trying to reassure that everything would be ok.
I plugged it in.
No. Everything was not okay… But restarting the computer always works, right? Wrong!
Needless to say, I’m still sitting in limbo half way between being down-right depressed that I may have lost the last 3 months of photos (including that Earl Grey Panna Cotta Tart) and complete and utter anger over the fact that I hadn’t listened to that voice in my head yelling “BACK IT UP”!! I’m currently waiting until next week when I have an appointment with Apple where I plan to drop off my hard drive, they magically get my library back, and I hop all the way home, happy as can be. It really is a beautiful sight in my mind.
As for the two year old, he is happily sitting over in the corner devouring these Cinnamon Sugar Sourdough Popovers. Damnit, why does he have to be so cute??!!
CINNAMON SUGAR SOURDOUGH POPOVERS
ingredients
popovers:
1 cup milk
3 large eggs
1/2 cup sourdough starter (ripe or discard)
3/4 tsp. salt
1 cup all-purpose flour
cinnamon sugar:
1/2 cup sugar
1 tsp. cinnamon (or more to taste)
1/4 cup butter, melted (for assembly)

popovers:
In a small saucepan, warm the milk until it feels just slightly warm to the touch, however not boiling.
Combine the warm milk with the eggs, sourdough starter and salt, then mix in the flour. Be sure not to overmix. The batter should be thinner than a pancake batter, about the consistency of heavy cream.
Heat a muffin or popover pan in the oven while it’s preheating to 450°F.
Carefully remove the hot pan from the oven, and spray it thoroughly with non-stick pan spray. Quickly pour the batter into the cups, filling them almost to the top. (If you’re using a muffin tin, fill cups all the way to the top and space the popovers around so there are empty cups among the full ones; this leaves more room for expansion).
Bake the popovers for 15 minutes, then reduce the oven heat to 375°F and bake for an additional 15 to 20 minutes, until popovers are golden brown. While popovers are in the oven, prepare you cinnamon sugar (below).
Remove the popovers from the oven and serve immediately.
cinnamon sugar:
Mix the cinnamon and sugar together in a bowl and set aside until ready to use.
assembly:
Remove popovers from pan and brush with melted butter.
Roll the popovers in the cinnamon sugar mixture, then devour!
