This past weekend I competed in a Synchronized Skating competition — my first ever. For 25 years I have been a singles skater, but this year I challenged myself to join an adult Synchro Team. They welcomed me with open arms and I have loved every minute. As I was preparing for our competition, I knew I had to pack a loaf of Chocolate Peanut Butter Banana Bread in my skate bag to calm my nerves. It’s funny how something simple like this help prepare you for the big stage… It might not be a healthy option, but it sure helped!
Chocolate Peanut Butter Banana Bread

Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 tsp salt
- 1 cup mashed ripe bananas (about 2 medium)
- 1/3 cup milk
- 1/3 cup peanut butter
- 3 tablespoons vegetable oil
- 1 egg
- 3/4 cup milk chocolate chips
- 1/3 cup peanuts, coarsely chopped
Instructions
- Preheat oven to 350°F (180°C). Spray bottom of a loaf pan with nonstick cooking spray.
- In a large mixing bowl, combine flour, sugar, baking powder and salt.
- Add bananas, milk, peanut butter, oil and egg; mix just until dry ingredients are moistened.
- Stir in chocolate morsels. Spoon batter into pan; sprinkle with peanuts.
- Bake 60-70 minutes or until wooden pick inserted in center comes out clean. Remove from oven; cool in pan 10 minutes. Remove bread from pan to cooling rack; cool completely.

This looks absolutely delicious! Gonna give it a try myself. Wondering if you can use Almond Milk instead of cow’s milk? Have you ever used White Whole Wheat flour in baking? Always interested in recipes that can incorporate that flour! Thanks for all your yummy recipes!!

I’m not sure about the almond milk vs. cow’s milk… never tried it, but it definitely worth giving it a go!!!
